I don&#8217;t brew beer or wine: I brew mead and cider. Unfortunately, my last few batches of mead have been extremely disappointing. When it was time to bottle my most recent batch, I was ready to give up on mead entirely if this one turned out badly.<\/p>\n<p>Surprise!<\/p>\n<p>This is the best batch of mead I have ever made. My faith in home brewing is restored. That&#8217;s the label over there, by the way. Click on it to get a better look. I went a different route this time with the style. Rather than the Old English or Nordic look I usually opt for, I went for a modern look.<\/p>\n<p>I&#8217;m not telling you what the name means. That&#8217;s a secret.<\/p>\n<p><em>Addendum: the recipe<\/em><\/p>\n<p>A couple of people have asked about the recipe. In my experience, the recipe matters less than blind luck, but here it is:<\/p>\n<p><strong>Thirteenth Story Mead<\/strong><br \/>\nMetheglin mead<\/p>\n<p>Ingredients (5 gallons)<\/p>\n<p>5 gal boiled water, cooled to blood temp<br \/>\n1 gal filtered water<br \/>\n15 lbs dark honey<br \/>\n1 tsp whole allspice<br \/>\n1 tbsp vanilla extract<br \/>\n\u00c2\u00bc tsp Irish moss<br \/>\n1 cup dark coffee (liquid, not beans)<br \/>\n4 campden tablets, crushed<br \/>\n1 \u00c2\u00bd tsp gypsum<br \/>\n2 pkg white wine yeast (I should have used champagne yeast, but it turned out well anyway, so who knows)<br \/>\n3 tsp yeast nutrient<\/p>\n<p>Procedure (5 hours)<\/p>\n<p>1 gal filtered water<br \/>\n15 lbs dark honey<br \/>\n1 tsp whole allspice<br \/>\n1 tbsp vanilla extract<\/p>\n<p>boil all of the above 15 minutes; skim protien<\/p>\n<p>\u00c2\u00bc tsp Irish moss<\/p>\n<p>boil another 15 minutes; skim protien<br \/>\nlet cool to blood temp<br \/>\ntransfer to carboy<br \/>\ntop off carboy with boiled water, cooled to blood temp, to 5 gallons<\/p>\n<p>mix together:<\/p>\n<p>1 cup dark coffee (liquid, not beans) (note: should have added this during boiling)<br \/>\n4 campden tablets, crushed<br \/>\n1 \u00c2\u00bd tsp gypsum (note: should have added this during boiling)<\/p>\n<p>add the above to the carboy<\/p>\n<p>mix together:<\/p>\n<p>2 cups boiled water, cooled to blood temp<br \/>\n2 pkg white wine yeast<br \/>\n3 tsp yeast nutrient<\/p>\n<p>let the above stand 15 minutes, then add to the carboy<\/p>\n<p>Timeline<\/p>\n<p>Started: \t2004-11-20\tHydrometer:\t11.66% \/ 1.092 \/ 23<br \/>\nRacked: \t2004-11-28\tHydrometer:\t1.0% \/ 1.014 \/ 3.5<br \/>\nBottled: \t2005-09-04\tHydrometer:\t0.5% \/ 1.011 \/ 3.0<br \/>\nDue:\t\t2005-11-20<\/p>\n<p>Alcohol content<\/p>\n<p>OG: 1.092<br \/>\nFG: 1.011<br \/>\n(1.092 \u00e2\u20ac\u201c 1.011) = 0.081 * 131 = 10.6 % ABV<br \/>\nI&#8217;m calling it 11%.<\/p>\n<p>Notes<\/p>\n<p>The best mead I have ever made.
